What you need to prepare:

8 ripe bananas
½ cup brown sugar
2 Tbsps. red rum
2 Tbsps. honey
1 Tbsp. corn starch
¼ tsp. salt
2 Tbsps. lemon/lime juice
1 Tbsp. GRACE HELLO
SOFT MARGARINE
1 cup GRACE COCONUT MILK
¼ cup peanuts

 

 
For this edition of BELIZEmagazine.com, our roving reporter was on the lookout for an easily prepared dessert dish.

In the village of Buena Vista in the Stann Creek District he met Belinda Alcaraz who told him about her favorite dessert, baked bananas with coconut cream.

Belinda swears, "Your children and grandchildren will love it ". When our reporter, expecting this recipe to be a family tradition, asked Belinda, "So you learned this from your mother over in Honduras?" Belinda laughed out loud, "No, my daughter told me she learned it here in Belize one day when she was surfing the Internet in school and came across the Grace Foods website."

That said, with bananas as the main ingredient, this recipe utilizes fine products from Grace Foods. Based upon the availability of bananas, it can be prepared almost year round.

  • Cut bananas into thick lengthwise slices.
  • Arrange the slices in a greased baking dish.
  • Combine sugar, rum, honey, cornstarch, salt and lemon or lime juice.
  • Pour over bananas and dot with Grace Hello Soft Margarine.
  • Bake at 200°C/400°F.
  • Serve with whipped Grace Coconut Cream and peanuts.
